The use of different vegetables taken from the oven brings your recipe a unique flavor. In my recipe I just 4 main ingredients. Garlic, potato, leek and vegetable milk. Of course, I also added a lot of herbs. Herbs like thyme, rosemary, or sage can add a fragrant and earthy flavor to cauliflower soup. Adding them towards the end of cooking can help preserve their flavor and aroma.

Ingredients

  • 1 head of cauliflower, chopped into small florets
  • 1 leek, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 200ml cup oat milk
  • Herbs, salt and pepper to taste
  • Optional toppings: croutons, chopped herbs, grated Parmesan cheese

Instructions

    1. Preheat your oven to 400°F (200°C).
    2. Spread the chopped cauliflower florets, potato sliced, leeks and te garlic in a single layer on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt, herbs and pepper.
    3. Roast the vegetables in the preheated oven for 25-30 minutes or until tender and lightly browned.
    4. Using an immersion blender or a regular blender, add the roasted vegetables and the oat milk. Puree the soup during 5 minutes or until smooth.
